  • 1 cup sourdough discard

  • 1 cup milk (warm)

  • 1 egg

  • 1 cup all-purpose flour

  • 2 tbsp melted butter (plus more for cooking)

1️⃣ In a bowl, whisk together sourdough discard, warm milk, and egg.

2️⃣ Add in sugar, salt, and flour, whisking until smooth.

3️⃣ Stir in melted butter. Let the batter rest for 30 minutes at room temp.

4️⃣ Heat a non-stick or crepe pan over medium heat. Lightly grease.

5️⃣ Pour a thin layer of batter into the pan, swirl it to cover the base.

6️⃣ Cook for 1–2 minutes per side until golden and just starting to crisp at the edges.

7️⃣ Stack 'em high and serve warm!
