Sourdough Tempura Batter (Light & Crispy Perfection) 🍤✨

Why This Dish?

Tempura is all about crispiness—and sourdough adds extra airiness and crunch without making the batter heavy. Perfect for shrimp, veggies, or even fish!

🛠️ The Magic Ingredients:

  • 1/2 cup sourdough discard (for lightness & crispiness)

  • 1/2 cup ice-cold sparkling water (keeps it airy)

  • 1/2 cup all-purpose flour

  • 1/4 cup cornstarch (for extra crunch)

  • 1/2 tsp salt

  • 1/4 tsp baking soda

⚡️ How to Make It:

1️⃣ Mix It Gently: Whisk sourdough discard, sparkling water, flour, cornstarch, salt, and baking soda until just combined (don’t overmix!).
2️⃣ Dip & Fry: Heat oil to 350°F (175°C), dip shrimp, veggies, or fish into the batter, then fry until golden brown.
3️⃣ Serve with Tempura Dipping Sauce (soy sauce + dashi + mirin).

🔥 Bonus Tips:

Keep it cold! Cold batter = extra crispy tempura.
No sparkling water? Use ice-cold water + a splash of rice vinegar.
Want ultra-thin batter? Add a little more water for a delicate crisp!
