Why This Dish?

🛠️ The Magic Ingredients:
1/2 cup sourdough discard (for lightness & crispiness)
1/2 cup ice-cold sparkling water (keeps it airy)
1/2 cup all-purpose flour
1/4 cup cornstarch (for extra crunch)
1/2 tsp salt
1/4 tsp baking soda
⚡️ How to Make It:
1️⃣ Mix It Gently: Whisk sourdough discard, sparkling water, flour, cornstarch, salt, and baking soda until just combined (don’t overmix!).
2️⃣ Dip & Fry: Heat oil to 350°F (175°C), dip shrimp, veggies, or fish into the batter, then fry until golden brown.
3️⃣ Serve with Tempura Dipping Sauce (soy sauce + dashi + mirin).
