The Dream Team (Ingredients)
500g all-purpose flour: The foundation of our masterpiece.
100g active sourdough starter: The star of the show, bringing that signature tang.
10g salt: Because flavor matters.
300ml water: The glue that holds it all together.
2 tbsp olive oil: For that silky smoothness.
The Game Plan (Instructions)
Mix & Mingle:
In a large bowl, combine 500g flour, 100g sourdough starter, 10g salt, and 300ml water. Stir until a shaggy dough forms.
Rest & Relax:
Cover the bowl with a damp cloth and let the dough rest for 1 hour. This autolyse period helps develop gluten.
Stretch & Fold:
Perform 4 sets of stretch and folds, spaced 30 minutes apart. With wet hands, grab one edge of the dough, stretch it up, and fold it over the center. Rotate the bowl and repeat on all sides.
Bulk Fermentation:
After the last stretch and fold, cover the dough and let it rise until doubled in size, about 4-6 hours depending on room temperature.
Divide & Pre-Shape:
Turn the dough out onto a lightly floured surface. Divide into 2 equal portions and shape each into a tight ball.
Cold Fermentation:
Place the dough balls on a floured tray, cover, and refrigerate overnight (8-24 hours). This develops flavor and makes the dough easier to handle.
Preheat the Oven:
Place a baking stone or steel in the oven and preheat to 500°F (260°C) for at least 30 minutes.
Shape the Dough:
Remove one dough ball from the fridge and let it sit at room temperature for 30 minutes. On a floured surface, gently press and stretch the dough into a 12-inch circle.
Par-Bake the Crust:
Transfer the dough to a piece of parchment paper. Slide it onto the preheated baking stone and bake for 5 minutes. This sets the crust and prevents sogginess.
Add Toppings:
Remove the par-baked crust from the oven. Add your desired sauce and toppings.
Final Bake:
Return the topped pizza to the oven and bake for an additional 7-10 minutes, or until the crust is golden and the cheese is bubbly.
Slice & Enjoy:
Remove from the oven, let it cool for a few minutes, slice, and enjoy your homemade sourdough pizza!
Pro Tips for Pizza Perfection
Room Temperature Matters: Ensure your dough is at room temperature before shaping to prevent tearing.
Less is More: Avoid overloading with toppings to ensure a crispy crust.
Watch the Bake: Oven temperatures can vary; keep an eye on your pizza to prevent overcooking.
