Sourdough Eccles Cakes (Flaky, Fruity, and Properly British) 🥧🍇

Why This Recipe?

Because if you’ve never had an Eccles cake, you’ve missed out on flaky pastry hugging a spiced raisin filling. This version uses sourdough pastry, making it extra tender and flavorful.

🛠️ Ingredients (Pastry):

  • 1 cup all-purpose flour

  • 1/2 cup cold butter

  • 1/4 tsp salt

  • 1/2 cup sourdough discard

Filling:

  • 1/2 cup currants or raisins

  • 1 tbsp butter

  • 1 tbsp brown sugar

  • 1/2 tsp cinnamon

  • Pinch of nutmeg

⚡️ Instructions:

  1. Mix pastry ingredients and chill for 1 hour.

  2. Cook filling in a small saucepan until bubbly and soft.

  3. Roll pastry and cut into 4” circles.

  4. Place filling in the center, fold and seal. Flip seam-side down and flatten slightly.

  5. Brush with milk and sugar. Bake at 400°F (200°C) for 20 mins until golden.

🔥 Bonus Tips:

✔ Use a fork to poke tops and let steam escape.
✔ Sub chopped dates or figs if you like!
✔ Best with tea and your feet up.
