1 cup sourdough starter or discard
1 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup warm water

Mix all ingredients until smooth. Let rest for 30–60 mins.
Grease crumpet rings or mason jar lids and heat a pan on medium-low.
Pour batter into rings (about halfway up). Cook 8–10 minutes until bubbly.
Flip and cook 2 more minutes for golden tops.
