Sourdough Revani (Semolina Cake with Syrup and a Tangy Twist)

Revani is Turkey’s classic syrup-soaked semolina cake—soft, fragrant, and delightfully moist. This version sneaks in sourdough discard for extra tenderness and depth of flavor. It’s the kind of dessert that feels fancy but is secretly super easy.
🛠️ Cake Ingredients:
1/2 cup sourdough discard
1/2 cup fine semolina
1/2 cup all-purpose flour
2 eggs
1/2 cup sugar
1/2 cup plain yogurt
1/4 cup olive oil or melted butter
1 tsp baking powder
Zest of 1 lemon
🛠️ Syrup Ingredients:
3/4 cup sugar
3/4 cup water
1 tsp lemon juice
⚡️ Instructions:
1️⃣ Make the syrup: combine sugar, water, and lemon juice in a pan. Bring to a boil, then simmer 5–6 minutes. Cool completely.
2️⃣ For the cake: whisk eggs and sugar until fluffy. Add yogurt, oil, discard, and lemon zest.
3️⃣ Stir in semolina, flour, and baking powder.
4️⃣ Pour into a greased 8x8 inch pan. Bake at 350°F (175°C) for 30–35 minutes, or until golden and set.
5️⃣ While warm, pour cooled syrup evenly over the cake. Let it soak in for at least 1 hour before slicing.
