Sourdough Börek (Flaky Cheese-Filled Pastry Rolls)

Why This Recipe?

Börek is crispy, buttery, and layered with flavor—traditionally made with yufka or phyllo dough, but here we’re using a sourdough dough that still gives you crunch and chew. Stuffed with cheese, herbs, or ground meat, these rolls are perfect for tea time, lunch, or late-night cravings.

🛠️ Ingredients (Dough):

  • 1 cup sourdough discard

  • 2 cups all-purpose flour

  • 1/2 cup warm water

  • 1 egg

  • 1/4 cup olive oil

  • 1/2 tsp salt

Filling Ideas:

  • Crumbled feta + parsley

  • Mashed potatoes + caramelized onions

  • Ground beef + sumac + dill

⚡️ Instructions:

1️⃣ Mix dough ingredients until smooth. Knead well and let rest 1 hour.

2️⃣ Divide into 6 balls. Roll each out thinly on a floured surface.

3️⃣ Add filling along one edge, roll tightly into a log, and coil into a spiral or leave as a log.

4️⃣ Brush with olive oil or egg wash.

5️⃣ Bake at 375°F (190°C) for 20–25 minutes, until golden and flaky.

✔ Let the dough rest longer for easier rolling.
✔ Add nigella or sesame seeds on top for extra flair.
