Sourdough Gözleme (Crispy Stuffed Flatbreads Cooked on the Pan)

Why This Recipe?

Gözleme is Turkey’s beloved street snack—thin dough stuffed with savory fillings and crisped to golden perfection on a skillet. With sourdough discard in the dough, it’s tangy, chewy, and satisfying enough to call it dinner (or breakfast… or snack… or midnight craving).

🛠️ Ingredients (Dough):

  • 1 cup sourdough discard

  • 1 1/2 cups all-purpose flour

  • 1/4 cup water (as needed)

  • 1 tbsp olive oil

  • 1/2 tsp salt

Filling Ideas:

  • Spinach + feta

  • Potato + herbs

  • Ground lamb + onions

⚡️ Instructions:

1️⃣ Mix all dough ingredients. Knead until smooth and soft. Rest 30–60 minutes.

2️⃣ Divide dough into 4–6 balls. Roll each very thin on a floured surface.

3️⃣ Place filling on one side, fold over and seal edges.

4️⃣ Heat skillet with a bit of oil. Cook each gözleme for 2–3 minutes per side until golden and bubbly.

5️⃣ Slice into wedges and devour immediately!
