Sourdough Lahmacun (Flatbread Pizza with Spiced Meat)

Lahmacun is often called “Turkish pizza,” but it’s lighter, crispier, and way more addictive. It’s a thin round of dough topped with a flavorful, spiced meat mixture—then rolled up with fresh herbs and lemon. With sourdough? The crust is next-level delicious.
🛠️ Ingredients (Dough):
1 cup sourdough discard
2 cups all-purpose flour
1/2 cup warm water
1 tbsp olive oil
1/2 tsp salt
Topping:
1/2 lb ground beef or lamb
1 small onion, finely chopped
1 tomato, grated
1 tbsp tomato paste
1/2 tsp paprika
1/2 tsp cumin
Salt & pepper to taste
Handful of chopped parsley
⚡️ Instructions:
1️⃣ Mix dough ingredients until smooth. Rest 4–6 hours or until puffy.
2️⃣ Divide into 4 balls. Roll each out thinly like a small pizza.
3️⃣ Mix topping ingredients in a bowl. Spread a thin layer over each dough round.
4️⃣ Bake at 450°F (230°C) for 8–10 minutes until edges are golden and crisp.
5️⃣ Serve with lemon wedges and fresh parsley. Roll it up and enjoy like street food royalty.
