Sourdough Pampushki (Fluffy Garlic Bread Rolls for Borscht or Snack Time) 🧄🍞

Why This Recipe?

Pampushki are soft Ukrainian-Russian garlic rolls traditionally served with borscht. But with sourdough? They become pillowy, fragrant little clouds brushed in garlicky goodness. One won’t be enough.

🛠️ Ingredients:

  • 1 cup sourdough discard

  • 2 1/4 cups all-purpose flour

  • 1/2 cup warm water

  • 2 tbsp oil

  • 1/2 tsp salt

  • 1 tsp sugar

Garlic Topping:

  • 2 tbsp oil or butter

  • 2 cloves garlic, minced

  • 1 tbsp chopped fresh parsley

⚡️ Instructions:

1️⃣ Mix all dough ingredients until smooth. Knead for 5–7 minutes.

2️⃣ Let rise 4–6 hours until doubled.

3️⃣ Divide into 12 balls. Place in a greased round dish or baking pan. Let rise 1 hour.

4️⃣ Bake at 375°F (190°C) for 20–25 minutes, until golden.

5️⃣ While hot, brush with the garlic-parsley oil mixture.

✔ These reheat beautifully—just warm in foil for 5 minutes.
✔ Serve with soups or dips—or eat straight from the pan.
✔ Add a sprinkle of flaky salt on top for extra pop.
