Sourdough Kulich (Russian Easter Bread with a Tangy Rise) 🕊️🍞

Why This Recipe?

Kulich is a rich, sweet, tall bread traditionally baked for Easter—but honestly, it’s delicious year-round. It’s like a Russian cousin of brioche, made even more flavorful with sourdough discard. Think golden crumb, dried fruits, and a drizzle of icing on top—festive and fun!

🛠️ Ingredients:

  • 1 cup sourdough discard

  • 2 1/2 cups all-purpose flour

  • 1/2 cup warm milk

  • 1/3 cup sugar

  • 2 eggs

  • 1/3 cup melted butter

  • 1/2 tsp salt

  • 1/2 cup raisins or chopped dried fruit

  • 1 tsp vanilla

  • 1/2 tsp ground cardamom (optional)

⚡️ Instructions:

1️⃣ Mix all ingredients (except fruit) until smooth. Knead for 8–10 minutes.

2️⃣ Fold in dried fruit. Let the dough rise, covered, until doubled (4–6 hours or overnight in fridge).

3️⃣ Shape into a tall greased mold or tin can lined with parchment. Let rise again for 1–2 hours.

4️⃣ Bake at 350°F (175°C) for 35–45 minutes until golden and a skewer comes out clean.

5️⃣ Cool and drizzle with icing made of powdered sugar + lemon juice or milk.
