Sourdough Simit (Turkish Sesame-Crusted Bread Rings)

Why This Recipe?

Simit is Turkey’s version of the bagel—crunchy on the outside, soft inside, and coated in toasty sesame seeds. With sourdough, it becomes even chewier and more flavorful. Eat it with feta, olives, or just tear it apart with joy and tea.

🛠️ Ingredients:

  • 1 cup sourdough starter or discard

  • 2 1/2 cups all-purpose flour

  • 1/2 cup warm water

  • 1 tbsp olive oil

  • 1 tbsp sugar

  • 1 tsp salt

  • 1/4 cup grape molasses (or substitute honey)

  • 1/4 cup water (for dipping)

  • 1/2 cup sesame seeds

⚡️ Instructions:

1️⃣ Mix starter, flour, warm water, oil, sugar, and salt into a smooth dough. Knead and rest 4–6 hours until doubled.

2️⃣ Divide into 6 equal pieces. Roll each into a long rope, twist two ropes together and form into a ring.

3️⃣ Mix molasses and water in a bowl. Dip each ring into this mix, then coat in sesame seeds.

4️⃣ Place on parchment, let rise 30–45 minutes.

5️⃣ Bake at 425°F (220°C) for 15–18 minutes until deep golden brown.
