Why This Recipe?

Syrniki are a Russian breakfast favorite—crispy on the outside, soft and creamy inside, and just sweet enough. Think cheesecake meets pancake. Adding sourdough discard makes them extra tender with a delicate tang that pairs perfectly with fruit or jam.

🛠️ Ingredients:

  • 1 cup farmer’s cheese (or well-drained ricotta)

  • 1/4 cup sourdough discard

  • 1 egg

  • 2 tbsp sugar

  • 1/2 tsp vanilla extract

  • 1/4 cup all-purpose flour (plus more for dusting)

  • Pinch of salt

  • Butter or oil for frying

1️⃣ In a bowl, combine cheese, sourdough discard, egg, sugar, vanilla, flour, and salt. Mix until smooth.
